SWEET EXUBERANCE (or the death of chocolate!)

Having explored our passion and lust for chocolate and the rich red wines that work so well with that most wonderful aphrodisiac for so many years, we have decided to break with "tradition" and set off in search of new romance this winter. Our December tasting will examine the pairing of white wines and fruits, and fruit-based desserts.

Tom and Nick met recently (over some fine desert wines and ripe goat cheese) and have set our sights on a botrytised Bordeaux, hopefully a Muscat Beaume de Venise, an opulent Muscatto from Italy, several late harvest offerings from California, Australia, Germany and the Northwest, and perhaps, if you’ve all been very good, another delectable Hungarian Tokay Essencia.

We’ve combed our recipe files and have a stack of about 15 or so recipes in search of talented chef’s to create them. If you have a way with fruits, pastries, pies, cakes, and the like PLEASE contact Nick (882-9409, nsanyal@uidaho.edu) and beg him to let you look at the recepies. Or better yet, come to the next Chapter board meeting (Monday, November 5, at 7:30 pm, at Tom Carroll’s new digs (882-1958, thom_carroll@hotmail.com, for directions). Our list includes such creations as a Navajo Pinon Torte, honey poached pears with marscapone, lemon thyme crisps, goat cheese torte, pear tarte tatin, Kiwi shortbread, caramelized fruit, and Toms own Floating Island (a New Jersey original). Also if anyone has a great fruit dessert be it a tart, custard, mousse, pie, cake, pastry etc., that they can survive winter without, please let us know.
